French and Spanish food are in fact the same if you remove milk creams, pâtes (we have them, but ust a couple of varieties) and the glorification of cheese.

But French cuisine became famous when the great Chef Restaurateurs had to open Restaurants for the middle class all around Europe after the revolution. When the court disappeared, they had to show their expertise to the bourgeoisie. 

In Spain, the great Master Cooks remained at the service of the Borbonic court.

Yes, we eat a lot of snails here, there are snail farms. There's a province here called Lleida or Lerida that are snail maniacs.
